My bike will run, without the oil light coming on, with as little as 2 quarts of oil('78 750F. System capacity of 3.8 quarts). This is the minimum amount my bike needs to circulate oil(the motor will overheat if run for very long). The remaining 1.8 quarts allows oil returning to the reservoir a chance to cool a bit before being sent back into the motor. If I add much more oil to the system than 3.8 quarts the oil level will be too high and will flow back into the crankcase via the overflow pipe causing added pressure on the system. My "max" system capacity with oil cooler is about 4 quarts of oil.

Not knowing the size or construction of your custom oil reservoir I can't give ya a direct answer, but hopefully you can use this info to determine for yourself how much oil to use.
Give me..a frame to build a bike on, and my imagination will build upon that frame
