I haven't tried what you are asking about. But, a smaller rim and lower profile/overall diameter tire, will, of course, lower the bike. If you are going for the chopper look for straight up cruising, no worries. But, if you wish to carve in the twisties, you be draging bits on the pavement, particularly when the springs compress. Taller shocks and stiffer springs will help that, of course. But, the rear swing arm geometry, with it hanging down more, means that chain slack is more variable with movement of the swing arm.
