Jaguar: I just recently did what you are doing for the most part.
I bought a 78 parts bike and swapped the rims/dual disc and shocks into my 76F.
My first question... is there anything wrong with the forks? Have you taken them apart, is something broken?
I took the ones I got apart, cleaned out some crap in the tubes, repainted them , replaced the fork seals and put them back together with fresh oil and they work very well. They are not as complicated as the older forks and to me, seems like there is much less to go wrong with them.

I used a local bearing vendor that I use for work to get replacement wheel bearings (very common standard size bearings are used)
And unless you know the condition of the brake system, I would rebuild the master cyl at a minimum and open everything up to make sure any 'crud' is cleaned out of the system. Last thing you need is to not be able to stop
