I pronounce it differently with no rhyme or reason, it just happens.

Show-ee
Show-ay
Shew-ee

Show-ay is the most common way I say it.

I was told once that in Japanese, it actually has 3 syllables.  The guy who told me this said he couldn't pronounce it correctly.  I've worked at 2 shops and have always used "Show-ee".
