Sounds like the mains might still be plugged a little in the carbs to me. Also check the carb boot clamps, ....and lean is out on those screws.
Some tricks I use to tell if it's lean or rich:
Take the air filter and lid off and try driving it, if it's worse than she's lean
Now put the filter and lid back on and start adding choke while driving. Only a little at a time, if it starts to get better, this also means it's lean as well.
You want to make sure your ignition is up to snuff before chasing a lean condition though. Points can also do that sort of thing
