Massive respect for Cam.  Olivia is a great example of a kick-ass, garage-built bike.  Cam modified the frame, rear shock mounts and swingarm and incorporated a substantially larger rear wheel, in addition to grafting on the modern front end.  Very inspirational!!

If thats on a stock hub, that would put the chain line out 8mm, am i reading that correctly...?

You are almost correct.
The swing arm is 1 3/4" longer than stock. Between the front off set + the swinarm lenght + the rear off set = straight chain line. I already had 200k on the bike with this set up. No problems and no odd wear lines on either sprockets.

What is it like to ride...cornering handling vs. straight-line?  I would like to do something similar, but I know a lot has to be done to make it 'right'.  Yours looks the part though. 
Also, why size front tire/wheel are you running?

They got all sorts of parts swapped, between years when racing as there are at least 3 different 'factory' motors
I got into XS pretty recently (about 10myrs ago) mine have Honda CR500 connecting rods, XV750 pistons and are 800cc

The bike rides amazing. Tracks smooth and straight on the highways. Weaves quick and nibble in the city streets. The rear shocks are from a early 80's honda XL500. They have lots of travel and a bit softer than the stock 550 shocks. Combo with the fine tuning on the cbr forks. I can really make the bike ride smooth or agressive to my liking. I do plan to swap the rear shocks out with some more modern progressive/adjustable ones. But for now, she rides lovely. ;) lol but I could be a bit biased .. Hahaha.

Ya. Their either 16.5 or 17" ... Forget off the top of my head.
The rear swingarm is a 1 3/4" longer. The shock mounts on the frame are almost 2" forward on the frame from stock position. Over all, the stock 550 shocks were much to short... I'd personally like to bring the rear down another 1/2".. I'll be taking that into consideration in purchasing the next shocks. For now I'll live with it.

550 and 750 frames are the same width apart. I ran a 750 swingarm in the 550 before. Exact fit. It will work.

550 and 750 frames are the same width apart. I ran a 750 swingarm in the 550 before. Exact fit. It will work.

Besides, I've had big wheels sitting round for a few years now and they do fit, I was just curious to what sprocket offsets you were using.... ;)
