can i switch to 1 inch bars

it seems there are more options for controls out there for one inch bars can i just switch them out? 1978 cb750k is my ride.

It can be done but would require machining and fabrication, either to adapt the 750 controls to the bigger bars or to modify harley controls to work with the 750 cables.  Not to mention the triple tree clamps.

There is an adapter for 7/8" to 1" bars. I found it once googling. Was something like this except the bottom of the part was a half of a 7/8" bar and the top of the part (indented) was 1". The only sacrifice is you are giving it a 1 or 2 inch rise.

I think that the adapter that you are talking about is common with the dirt bike set.  It allows for the use of ProTaper bars on dirt bikes.  I have a set of YZ450F forks in my garage (for some unknown future project) that have those adapters.

If you go with 1" bars, look for completely different controls rather than trying to adapt the existing Honda 7/8" ones to fit the fatter bars.
