Waaaaaay off topic; favorite recipe YOU make

Been talking beans and grits over at chopper thread and getting hungry. At my house, if I want to eat anything besides a baked potato w cottage cheese, I have to do it myself...
So, here's one I made up now that it's peach season. Very easy~
Salmon & Peaches;  salmon filet skinned and breaded, covered in bread crumbs/crushed corn flakes.
I have 2 black cast iron skillets, one medium, one large. I do ALL my frying/sauteing in them and they never see water unless I'm doing a little steam thing.  You need to figure out how to semi-deep fry. Practice on your little sisters hand first. When the oil is just right, pour in a big layer of Tiger Sauce. No other brand will do. Wear your gauntlets and full face helmet while you do this. (They'll stop laughing when they taste it) Quickly put the filet on top of that and cook fast. It should get almost black and crusty before you turn it over.  (While all this is going on- before you even poured the oil, you sliced a fresh ripe peach, put it in a bowl, and covere the pieces with Tiger Sauce to marinate)  A minute before the fish is ready to come out, lay the peach pieces around the fish to saute just enough to soften a teeny bit. Serve the salmon with a couple of peach slices on top.   This would work with blackened salmon I imagine, but I'm self taught and don't know how to do "blackened".   If I play my cards right maybe a famous restaurant owner around here would tell me...      Anyway, this is good with a sweet potato or I like to mix half white and half brown rice with a touch of wild rice mixed with a few raisons and sliced almonds. 

I'm getting sick of my own cooking/routine. All that stuff up there is actually really easy. Need more ideas besides using toast for a PBJ.

To blacken is easy...
Place meat in pan at high heat.  Go mix a drink.  When finished with drink, ask wife, girlfriend, significant other to tell you about their day.  Listen without interuption until they stop talking.  Return to kitchen.  Turn off stove, turn on fan and wait for smoke to clear.  Blackened whatever awaits you.  Oh yeh, a hammer works great on shutting up the smoke alarm.  Much less effort than you wife.

duster- it's in with the hot sauces like Tobasco and Texas Pete, but it's not as hot- more spicey than hot.

one of the best hot sauces i have ever tried is Cholula..It has a round wood top.

knocks the hell out of tobasco. not real hot but tastes leagues better

I’m not a fan of eating things that have the intensity of a branding iron.  But, this is way more tasty than hot.  Gets raves whenever I serve it.  Pretty easy to make, too.  It's from the book "Neander Thin".

Spicy Pork Chops

Ingredients:
4 tablespoons bacon grease (or 5 tablespoons olive oil)
4 pork chops (thick)
1 large onion (sliced or chopped)
2 cloves garlic (minced or chopped)
1 teaspoon ground cumin
1 teaspoon oregano
1 1/2 teaspoon salt (2 teaspoon salt if using olive oil) (I leave this out, most times)
2 tablespoons Chilli powder
1 cup tomato  sauce

1. Put grease (or oil) in a large , deep skillet over medium heat
2. When grease is hot (sizzling). Put pork chops in pan and allow to brown fully.
3. Put onion and garlic in pan, and saute until soft.
4. Add herbs, seasonings (only 1 tablespoon chilli powder), and tomato sauce.  Cover and allow to simmer for 8 to 10 minutes.
5. Uncover, add second tablespoon chilli powder,and flip chops.  Simmer until tender.
6. Serve hot
7. Optional:  Garnish with sides of gaucamole and salsa

here's a different type of spaghetti for all ya try new things type of folks...

the noodles are easy... if you dont know how to do the noodles... please, move back in w/ mommy!

this is the sauce I love:

grab your favorite spaghetti sauce... be it cheap or extravagant it will most likely come in a can or jar
grab your favorite can of red/kidney beans... be it cheap or extravagant it will most likely come in a can or jar
grab your favorite can of yellow corn (sweet or regular)... be it cheap or extravagant it will most likely come in a can or jar
mix ingredients and heat to serving temperature... add basil and/or oregano to add zest.
oh yeah, don't forget the beef

this is a simple, fast, and cheap dinner... different enough to interest your guests and quick enough to whip up in a flash.

this is one that we serve at Buffo's

2 sticks of butter - not margerine
1/2 cup of heavy cream or heavy whipping cream...the more butter fat the better
a SMALL pinch of salt
1 cup of GOOD parm (not the #$%* in the plastic shaker) grated
a nice spinkle of course grind black pepper
1Lb of Rigitoni  pasta
1/2 pound of raw deviened, deshelled shrimp (about the size of a mans pinky finger)
10oz of canned baby clams (cooked)
1 loaf of fresh italian bread
one bulb of fresh garlick crushed and diced

cook pasta until JUST not quite done.

do all the rest while pasta is cooking

CUT BREAD LENTH WISE AND BUTTER BOTH SIDES WITH 1 SICK OF THE BUTTER. THEN PUT THE GARLICK ON BOTH SIDES OF THE BREAD. WRAP IN FOIL AND BAKE AT 350 UNTILL THE REST OF THE MEAL IS READY

PUT 1 STICK OF BUTTER, 1/2 CUP HEAVY CREAM, small pinch of salt and a nice sprikle of course grind peper IN SAUCE PAN AND MELT......REMOVE FROM heat after melted

MIX IN SOME PARM WITH BUTTER AND CREAM ABOUT 1/2 A CUP - SET ASIDE

in a hot fry pan saute shrimp and clams with a little olive oil until shrimp ar pink -DONT OVER COOK

when done mix pasta, sauce and seafood together in a big bowl. seperate into two plates. Sprinkle with some parm and some course grind peper.

cut loaf of bread into slices about 2 inches wide keeping top and bottom together. keep in foil to keep warm.

This is my once a year dish called "Scarpadella" that I got from my brother in law.  Don't know if it is the right name or where it its from but I look forward to making it every time....

Preheat oven to 350 or so

Brown 2 good sized linguisa sausages in a hot skillet, and transfer to large oven proof dish.
 
Part out two good sized chickens and brown in the same skillet, and transfer to dish.

Throw in a bunch of small potatoes cut in half, carrots and celery cut into 1" pieces, and anything else that looks good.

A small container of both good kalamata and green olives.

Add lots of rosemary, typically almost a whole jar.

1 1/4 bottle, or more, of a decent red wine, something with some body to it.

Put in oven till chicken is just about to fall off the bone.

Serve over rice and with feta cheese crumbled on top.

Bon appetit!

Looks hard but most of the work is in the oven.  Anyone know the correct name of this dish??  Probally an Americanization of something close...

Sounds pretty tasty. I'm not familiar with Kalamata, so I Googled it, found either a place, or reference to Kalamata olives, but you phrased it such that it should be Kalamata AND olives. Can you clarify?

A Kalamata in the stores is a type of olive. Football (American style) shaped, more chewy than black olives, usually has the pit in it, not as "twangy", if you will, as green olives. Great with cheese. Women of the "earth" variety love them with cheese, apple slices, and Ack Macks (sp?) crackers. Natural food places sell them in bulk, or they come in jars, not cans.

Another oldie thread I enjoyed reading. Here's my 44 cents worth (4 cents + inflation)

For those with a sweeter tooth, Bread Pudding, aka Clag

Collect crusts from loaves of bread for a few months. Keep in freezer until ready to use. They go mouldy otherwise.
Break into small pieces (or for the namby pambys out there use your food processor), the finer the better.
Remove rings and watches and wash hands. If you don't the mixture will turn grey.
Add some butter and milk and commence to squish the mix with your hands.
Add raisins/currants in as much abundance as you fancy.
Add an egg or two if you want protein (the health conscious can remove the yolks first if they want)
Add sugar to your desired sweetness
Add all spice
The final mix should be moist enough to slowly fall off a spoon, and you should have enough to fill a cake pan or two.

Bung in the oven at 300-350 and bake until a clean knife stuck into the middle comes out clean. Careful with the temperature, since you don't want the top to be totally rock hard before the middle cooks.

That one sounds pretty interesting.

I use it at the aid stations for the 50k run I organise each year; it seems to hit the spot, and with plenty of protein doesn't cause runners tummy.

My Chili recipe:

1 lb ground beef
1 large yellow onion
1 large green pepper
1 can red kidney beans
1 can black beans
1 can yellow corn
1 can stewed tomatoes
1 McCormik Chili Seasoning Packet (I use HOT!)
tabasco sauce
shredded cheddar cheese
ground black pepper
corn tortilla chips

1) chop up the onion, chop up the green pepper, put in a large cook pot, and add the ground beef.  Sprinkle in some black pepper, and brown the ground beef (with the onions and green pepper.)  Once it's browned, drain the fat if necessary.
2) in a collandar, rinse the red beans, black beans, and corn (gets all the perservative sodium liquid from the can off it- yuck!).  Add red beans, black beans, corn, and stewed tomatoes to the cook pot.  Stir in the chili seasoning.
3) cover pot, and let simmer for 45 minutes, stirring occasionally.
4) serve in a bowl, with tortilla chips around the perimeter, and topped with shredded cheese- add tobasco to taste..  

MMmmmmm!!!  This is for folks that like a thicker (not soupy) kinda chili.

*Optional*  Add 1 cup uncooked brown rice, two cups water to a seperate pot, bring to a light boil, then cover and simmer until the rice is cooked.  Stir in the rice when you add the beans, corn, and tomatoes- and cook as normal.  Heavy man heavy!  Good stuff.

Oh Nick I can smell it already! I love bread pudding - my Gran used to make it superbly (don't they all?). As children we used to be sent out to play with a lump of Bread Pudding in a hanky in our pockets to 'keep us going'. It inevitably got squished but seemed to taste better for it.
It seems to be making a come back locally and the bakeries are starting to make it again. I haven't made it myself (struggle to boil an egg) but I'm tempted to give your recipe a go.
I've been doing a few 10ks recently - I'll try it on the one I'm doing this weekend and see if it improves my time.  ;D

I just found this the other day.  Very good.

Jerked Chicken

4 Tbs soy sauce
4 Tbs red wine vinegar
3 Tbs brown sugar
1 tsp sesame oil
1 tsp onion, chopped fine
2 tsp chopped fresh thyme
1/2 tsp ground allspice
3 cloves garlic, chopped or pressed
1 habanero pepper
4 skinless, boneless chicken breast halves cut into 1 inch strips or
  equivalent amount of chicken strips

1:  Place all ingredients except chicken in blender and blend until smooth.
2:  Put chicken strips into a large, resealable bag.  Pour in approximately 3/4 of blended sauce.
3.  Squeeze air out of bag and seal.  Marinate in refrigerator for one hour or more.
4.  Preheat broiler (or barbeque)
5.  Discard marinade.  Place chicken on broiler or barbeque and cook until heated through (10 - 15 minutes). 
    Turn once half way through to ensure even heating / browning.
6.  While chicken is broiling/barbqueing heat remaining sauce, pour over chicken when serving.

The recipe suggests serving with rice, but potatoes, salad, whatever is just as good.
