When is hot too hot?

My k5 750, to me seems to run extra hot?I know that running lean and not timed correctly can cause this.I don't believe that  iam not that far off on either setting.I did place a thermometer in the oil tank after running it for 15 minutes (yes After riding )It read around 200 degrees.Also the oil has a light smoke coming off it?? I am a little more than concerned about this cause i just got done with replacing the cam and rockers after toasting a cam bearing.I believe i pick up some crap in the oil passage to the #1 cam journal.The motor i replaced my original one had nice clutch and gear shavings in the pan.I guess i didn't get em all.I have since changed the cases,cam ,rocker Assembly's.Just don't want to smoke the motor again.    Any help would be welcomed.

Motor oil's acceptable operating range is between 180 and 230 degrees F.

Pity you can't monitor the oil temp at it is supplied to the oil galley.

However, if the oil scavenged from the crankcase sump after it is used by the engine and placed in the oil tank is 200 F, that seems reasonable.
