OK, here's what I done did.  I took the spring off the anchor point on the carb body and let it unspring completely.  Then I wound it up until it could 'just' be hooked on the cross bar after 'turning' the end of the spring 90 degrees so it would hook properly.  Seemed great with the carbs off the bike but not 'quite' enough tension when the cables were hooked up.  So, after confirming that if tighter and suddenly it slipped, it would hook the bar at a minimum, I used a zip tie and pulled the spring tighter by hooking the zip tie between the frame tube and the spring hook.  The result was just enough tension to snap the throttle closed if I let go the grip, but such easy tension the darned thing surprised me.  I was so surprised in fact that I had to take a fast trip up the windy mountain road here to the next town and back just to get the feel of it.  Wow, what a difference.   Why ever did I wait so long.  It's so easy and smooth now I have an EXTRA big smile on my face.
Now... on to the next project..  Hmmm I think I'll pull all those plastic rear fenders off and put on the nice chrome one I found at the local dump metal recycle bin (from unknown year but pretty sure it's a K model.

...Some times simply changing the angle can help, many professional typists (like my wife) have learned to alter the height & distance of their keyboard.

I'm actually trying this first, just loosening the throttle assembly on the bar and moving it up until my wrist feels right.
