My opinion, as a short time owner of a well maintained 1977 F bike, is it's a nice machine. The real issue with the F bikes is valve guide wear, mostly on the exhaust valve side. There are various work arounds for the valve issue.
I have found there are parts which are difficult to find and they may cost more than the K equivalent versions, but that's a situation we all face with keeping 30+ year old motorcycles running. Do we obsess, sure. I'm guilty of that.
The scenario you describe to customize your bike is a win-win for everyone. You can sell the pieces you take off the bike to support your customization effort and give those of us who need to keep their stock bikes in shape, a source of parts.
I'd just enjoy the bike, customize and ride it... afterall, in the grand scheme of things it's only a motorcycle....
