I'm no expert as regrds wiring so I can't answer your first question, but to the second one I would say use bullets every time. Just incase the eventuality of having to disconnect the wire you've just soldered arises. One day you're gonna chop off too much of the wire and will have to rewire the whole path.

The factory bundles were electrical taped. You can get silicone tape at Home Depot in the plumbing section. It is black and you stretch while you wrap it and it really holds well, looks nice, and should last a long time.

I'm no electrical wizard but I just used plain old black electrical tape to cover some of my wires. Wrap it tight like bobby says and it looks just fine.

Where ever I see a possible chafing situation, I cut a short length of plastic wire loom, wrap the harness with the loom, then, tape over the loom so that it stays in place and looks factory.
Can I have a motorcycle when I get old enough?
If you take care of it.
What do you have to do?
Lot’s of things. You’ve been watching me.
Will you show me all of them?
Sure.
Is it hard?
Not if you have the right attitudes. It’s having the right attitudes that’s hard.

All shrink tube, all the time.  ;D 8)  Just make sure you go through ALL of the connectors and resolder EVERYTHING before covering it with the tubing.  (it would be a real pain to have to trace a wire without cutting into the tubing!) I haven't had a single problem though, pretty much water tight and protects the wires really well.
