help/ advice/ tips????? for CB500 forks

I've got a 73' 500/4 with wayyyyyy overstock forks (8-10 inches). with this length in the front, i'm on my toe tips.  (I'm, as the say, inseam challenged)

Well I figured with new seat, stock forks, harley rim swap (already done when i purchased the bike) and smaller rear shocks, I can be flat footing it  in no time!

So my first project on the list is to swap out the forks for stock. When I purchased a stock fork set on eBay, I cut into the shock boots and noticed a lot of dust and rust! Is my project doomed? I purchased a whole front fork set up triple, forks, and all. what I want to do is swap out the stock tubes and internals to the bike's original triple and then use the lowers from the long forks because they are in better condition.

Am I on the right track? Any advice on cleaning the other forks or replacing them? Can I replace the tubes and still use the stock internals?
Any recommendations, advice, tips, or consoling  would be greatly appreciated!
