So while fighting with my engine more I finally found a way to test (somewhat) how well my carbs were working. Since my pods aren't on right now I was able to put the palm of my hand over the air intake of each carb as I was cranking. After a couple of cranks the carb started to flood out a bit, but at least it confirmed that my jets were doing their job
