I am going to make an attempt at powder coating my wheels.

I have a couple questions before hand.

Just took the rear one apart. There is a little rubber gasket type thing on the inside of the plate that goes over the sprocket, is this removeable?

Second, are there any rubber gaskets or anything on the front wheel hub that I should know about that might be destroyed in 380 degree heat?

rubber gasket? what year? Got a pic?

Your front hub should have the bearings removed before hand. That should be about it.

Same for the rear also.
