What coils will interchange on the SOHC 750?  Preferably something with replaceable wires. ???

Well a common coil replacement is a coil from a cb750 from 1979 on tp 82 or something like that. The same coil is on the cb 900. These are 3 ohm coils so spark will be stronger and may go through points quicker if you still use them. If you use electronic then the performance will be better but you may or may not notice much difference.
The wires are replaceable also.

Eldar,

That's pretty much what I wondered.  Are the stock coils 5 ohm?  And is the bracket a direct bolt-on?  Actually I am still running points ignition, I even bought a new assembly mounted on the backer plate for replacement when necessary. :-\

There may be some modification. I do not know since I have not done it yet. I am going to sometime though over the winter.
