Looking for exhaust advice.

I have a 74, I bought it with a 4 into 1 header and a slip-on with no baffling in it. It runs good, so I'm assuming it's been jetted correctly, but don't know for sure. It is loud, I'm not of the opinion that all loud exhaust's are good, some are some are not. My bike sounds decent at lower RPM's, and wonderful at full throttle. But it being 50 years old, I spend most of the time at lower RPM. Would it sound better with a little more restriction in the slip on?

Also, if I did install a new slip-on, with actual baffling inside of it, would I then have to re-jet my carbs, for them to work well with the new exhaust?

HAHA. I was about to post the exact same issue.

I have a Carpy 4 to 1 exhaust on my CB 550. No baffle. Just had my carbs re-built. I am also looking for a baffle that works and was wondering if I would have to adjust the carbs after installing the baffle as well.

Exhaust changes are extremely unpredictable in regards to carburetion.
If it works good, it looks good...

IMO, you need some back pressure with a Kerker because the primaries are already oversized for a stock or even mildly tuned engine.  Sean is absolutely right - it's very unpredictable what effect that change will have on your carburetion.  I would expect to have to make some adjustments and maybe change the main though.  A Kerker without a baffle is probably throwing a lot of gas out the pipe.
