Do you mean the dust caps (black caps that bridge the gap between upper and lower fork) or do you mean the fork seals (seals under dust caps that hold the fluid inside the forks)?
For the dust caps, it's just remove the wheel, fender, etc, drop the forks outta the trees, pop old caps off, slide new ones on, assembly is the reverse of disassembly

Replacing the fork seals involves a little more work. First, why are you replacing them? Are you leaking fluid? What's the state of the upper fork tubes where they slide though the seals? Any nicks, scratches, or pits?
Replacing these involves all of the above, plus disassembling the forks themselves. This constitutes draining the fluid, removing the upper cap, removing spring, removing the center bottom bolt that holds the damper rod in place, removing the fork seal circlip, separating the upper and lower tubes, prying out the old seal, pressing in the replacement, assembly is the reverse of disassembly
