The service manual and owner's manual differ on this.
The service manual says that after an oil change/drain/etc, you should put in 3.1 quarts, the owner's manual says 3.0 quarts.

Both agree that after this, you should stand the bike upright on level ground (or the center stand?) and check to make sure that it's at the upper mark on the dipstick.  If it's not on the upper mark on the dipstick, you add up to half a quart more.

6 quarts is roughly twice what you should be running.

I've somewhat overfilled my 650 before, but all that really happened was that the additional oil pressure 'helped' push my shifter seal out.  :P $5, an oil filter and change, and a week's worth of lost riding later everything was ok. BUT that was probably only half a quart over what my bike wanted/needed added because of side stand lean.

I've never known a 750 to take more than 4 quarts of oil even after a complete rebuild where the motor was bone dry (well, aside from assembly lube).

So where did the extra two quarts go?

Also, what are you using for an oil tank?  Most of the oil resides in the tank in normal circumstances.

Are you checking the oil with the bike on the kick stand? That will definitely do it

It doesn't matter.  I can't speak for all models, but at least on the early 750 there is no noticeable difference in the oil level reading between the side stand or center stand.

It may vary slightly on other models, but it's not going to vary by anywhere near two quarts.

I think there is  a bigger issue here, trying to flog a bike together quickly, without a good plan. let see a pic of the oil bucket.

For someone with 3 750 sohc's, they sure seem to have minimal knowledge about the most basic of thing to do on them.. take the time & do it right..
