How does a person tell if paint is original on tanks and panels? Were the parts clearcoated from factory? What to look for to check?

Yes, the paint was clear-coated from the factory.  If the painting, color matching and decals were done really well, it would be hard to tell if it were repainted, other than the fact that it looks perfect, which would be unusual for a 35 year old bike.  Often when repainting, the back side of the side covers and the bottom side of the tank won't be painted the same, so that's where I'd look first.

After awhile being around them alot you will know every color they made and on what year.When you look at them you will know. Pretty hard to match the old original colors exactly,and if they did its a good thing.  http://www.spookytoms.com/CB750K-PaintColors.html

Very hard to tell. I have a NOS tank in an original Honda box and when it is side by side with my restored tank the only difference is a very slight variation in the aftermaket decal that I bought. Even the over spray on the bottom of the tank looks the same..
