Throttle adjustment?

Popped my carbs back on last night after a thorough cleaning, and my idle is really high – even with the idle speed screw backed out all of the way (to where it’s not even touching anymore). I think I f’d up my throttle cable adjustment when I put it back on and it’s holding the slides open too much. I’m not exactly sure about the process of adjusting that though – can someone explain it? The throttle I have is not stock and uses only the “pull” cable, so there’s only one to adjust. If I want to “let it out”, do I screw it in all the way at the throttle and back it out at the carb? I had it at screwed out most of the way at the throttle and screwed in all the way at the carb.

The adjustment at the top near the throttle grip is for fine-tuning.  Set that in the middle of its adjustment range, then set the adjustment at the carbs so you have just a tiny bit of slack when the throttle is closed, then fine-tune it with the top adjuster if needed.

So if it is too "tight" would that cause my butterflies to hang open too much? Or are those adjusters basically for throttle play only?

Yes, if not set properly the throttle cable can keep the slides from closing completely, causing the idle to be too high.

You should have a fair bit of slack in the cable with throttle  released. It is also possible with most carb racks to mess up the sync adjustments so that the slides won't close all the way. If you dismantled the rack or disassembled the sync adjusters when removing the slides then that is a possibility. Also the choke idle advance machanism can hold the slides open if something has been changed in there. The choke idle advance, sync adjusters, and idle adjuster all interact and have to be set correctly. If you didn't change any of these when cleaning the carbs then the cable slack is the likely culprit.

If your return spring is doing its job (check) you've probably set your slides with too much idle screw. 
pull off your airbox/pods and look inside #1 or 4, and see how closed your slides are with the idle screw turned all the way out and your throttle returned all the way.  maybe with a dental mirror.
the space should be little if none.
check that the return spring "springs" your slides down.  if it does, and there is still too much space, pull your carbs and reset the slides with idle screw touching +1 full turn.
