Got a good build going there. I am just starting my project of a 72 CB350F.
One thing about the shocks, any stock shock of that era (even up to the mid 90s) is basically just a spring and no damping. Stock Jap shocks are almost always over-sprung and under damped, making the bike feel real stiff. Emgo shocks, even brand new aren't much better.
I'd buy a set of Hagons or Gazi shocks, made for your bike and your weight/riding style. It'll make a huge improvement in riding and control. Just a suggestion. But on my CB350F it'll be Hagon or Gazi. The stock shocks are only good for the metal in them.
