 I know I could do it....eventually. I've done plenty of them on my Yamaha XS's. I'm narrowing down the punch list and hope to be riding this thing SOON.
 It's worth it to me to have this guy do them right....and fast.

before having someone rebuild, see if they have an ultrasonic cleaner bath he can drop them in overnight for cheap. (my mech will do it for $10)
  or... i find that the "B" string from an electric guitar set (light gauge) works great to clean the idle jet out. spry carb cleaner and run the string through back and forth.  like magic.

well the bench synch is only intended to tune the carbs close enough to get it to start and idle. to properly syncronize the carbs you need to use a manometer. you can make one using jars with water, clear vacuum hose and some threaded inlets for the intake vacuum ports, you can also get a really nice mercury manometer from motionpro for about 40 bucks. im interested in seeing some user homemade manometers, but that's a whole other thread. you just need the bike to run long enough to sync it (about 2 minutes). of course the carbs will only sync up if theres adaquete and even compression. done a compression test?

keep in mind that even after the carbs are rebuilt, they will still need to be syncronized on the bike, running with a manometer. Personally I would clean them myself and spend the money from guy's labor on a good mercury manometer and maybe (if they're really that dirty) have your local machine shop put them in their "dishwasher". Should be about $10.

On a minor point, I had same problem sorting which overflow was bleeding so I got a permanent marker pen and put stripes around them, one stripe for #1 two stripes for #2 etc works great. :)
I think the thing I most like about motorcycling is the speed at which my brain must process information at to avoid the numb skulls who are eating pies, playing the ukulele, applying make-up etc in the comfort of their airconditioned armchairs as they make random attempts to kill me!!!!!!!
