So I was looking into some new wheels for the bike and I cant really find anything that was dead on as far as measurements go, mostly the width. So how much does say going up or down and inch in diameter or not matching the width 100% effect the bikes performance as opposed to stock set up? Do slight changes in the wheels measurements really change the bikes orientation that much?

If you are going by the old numeric size tires. You will not likely find any exact matches. You can safely run the 100\90-19 on the front, and 130\90- on the rear for the spoke wheels that you are looking for. A 1" change to the diameter of the rear will alter the final drive ratio slightly, but not to any point that the bike will become unsafe.
