Trusted souther california shop?

I just recently became the proud owner of a bobbed out 78. It cam from northern pheonix so I wanna get it tuned for san diego. How hard is it to tune these bikes? Is there walkthrew anyway and exactly what to do? If its complicated I would like to take it to a shop but I dont wanna take it to just some old shop I wanna take it to someone who has respect for the old school engineering. For what its worth my mechanical ability consist of being a helicopter mechancs and I never take my truck to a shop for anything.

If it ran well in AZ, at near sea level, it should run well in San Diego, at sea level.
