Over 200 is fine, the oil should get above 212 to boil off any water in there. I would expect the oil to get up to 240 at least, from what I've read 260 is about the maximum temperature you should get to. Engine oil temperature gauges commonly go to at least 300F. JC Whitney has an electrical one on sale now for $3.18. Or dip a candy/deep fat thermometer in the tank. The tank reading should be quite accurate if you measure right after a ride, in my experience the hottest oil temp I get is during a hot day highway ride regardless of the fact there's lots of cooling air. If I had a gauge I would know for sure I guess. I try and avoid stop and go driving on hot days but I expect the oil and engine would get really hot then. I used temperature indicating stickers on my oil cooler, these are a "one shot deal" that change colour permanently when the rated temperature is reached. I made 245 on a highway run.
