'78 CB750 rear wheel and hub on a '74 CB750?????

Will it just swap? If not, what will I need to make it fit?

Use the 77/78 wheel, with your sprocket holder& inner spacer. Use your original outer spacers, then it should fit..

ie use only the wheel, or wheel and brake, but not the sprocket side (has more offset)

On a related topic, I'm trying to put a K7 engine in a K6.  It appears to me that if you mount a 530 sprocket on the K7 engine, your front sprocket is about 10mm or 3/8ths of an inch outboard relative to where the K6 engine would have put it.  It seems that CycleX sells a 10mm (20mm as well) offset rear sprocket which would work.  Is there another way to do this?   Spacers?  Change the whole swing arm and use a K7 carrier?

I think our issues are little different.  When you say "K5 Sprocket", I assume you mean a 530 as opposed to 630.  The 530 sprocket is a little "fatter" where it goes on the shaft.  I have heard that people just tighten down the center bolt and are okay.  If you want some float (which I think was intended for the 530 setup), you can "build out" where the bolt and washer tighten down with one or more washers.  The way the K7 with 630 setup works baffles me a bit because I believe the sprocket is intended to be held down tightly to the shaft with the single bolt and washer.  The 530 seems to be engineered to float a bit.  

My problem is that I'm out of alignment.  Your alignment should be perfect.  If you look at the following picture (530 left and 630 right), you'll note that the "height" of these two sprockets is different - 530 being taller.  They are both "engine side down".  The teeth centers (also center of chain) line up perfectly.  So, I think you're okay. The extra height of the sprocket is all on the "outside" of the center-line of the chain.

Simply put..regardless of if you run 530 or 630 chain;

77/78 motors have a longer sprocket shaft.
 and a sprocket carrier (AND INNER SPACER)
with more off set (to match shaft on motor)

 If you are running a late motor, you have 2 choices;
 Run the correct sprocket holder and spacer
 or...
 shim out your sprocket on an earlier sprocket carrier.

 Its that simple..
