I'd do it. I'm a bit soft in the head when it comes to CB750s though.

If I were doing it, I'd be assuming I needed a saddle, pipes, paint, maybe side covers, maybe gauge work and plenty of maintenance issues like: MC rebuild, caliper rebuild, fork seals, tachometer seal, rear shocks, carb cleanup, new air filter, possibly a rectifier (if they've been jumping it because of the bad battery, they may have gotten the polarity wrong once or twice), electrical connection cleanups nearly everywhere, possibly some cables (throttle (2), clutch, tach, speedo), tires, steering head bearings, swing arm bushings, maybe wheel bearings.
