What is the best coating to use on the engine case? Something that will take the heat and cleans easy

If you are talking about the aluminum covers, many people just polish them up good and then give them a rubdown with Mothers once or something similar once or twice a year. People have reported that clearcoat yellows from the heat. Some paint them black.

If you're asking about the case [not the covers] engine paint seems to work best.
Do a search, some guys have had great success using Duplicolor rattle can paint [that's what I have planned for my 750 project].

Good Luck

For the case do a search, there is one paint that people say is spot on with the original.

That's the VHT SP127 but I understand that they've recently changed the formula and it's now almost chrome-like. If so, looks like the Duplicolor DE1615 is the only rattle can option... RR

As with most everything else, preparation is everything!  Make sure your cases are clean.  Give them a bath in your bathtub.  Dry them well.  From this point on, use rubber gloves to keep oils from your skin from getting on the cases.  Once you are sure they are dry, spray them with lacquer thinner to get any residual oil off.  Let the thinner dry a couple hours.  Then you are clear to paint.  I have had great results with this.
