my beer is gurgling

just made a batch of homebrew
it's gurgling as i type
got about three weeks before i can taste it
such a long time

I was just drinking some of my last batch the other day.. it was a bit of an experiment and came out ok
The idea was a dark almost stout
-Lost of dark and extra dark malt and steeped barley
-Juniper berries
-Cocoa nibs
-heather
-some honey added on the early side to keep away the sweetness

i used to make beer from scratch in the eighties,ive been going here for over two years now.
http://www.ubrewit.com.au/  you can modify recipes or invent your own aswell to suit your taste,it takes two weeks to ferment and for a little extra you can can it.

Oh, the sweet sound of beer fermenting! Gotta love it.

Now everyone you talk to will have their favorite beer, whether it’s a light hefeweizen style beer or my favorite, a nice hoppy IPA, or any other great choice, beer is awesome. Brew it, buy it, and enjoy it.

Nothing better them a good homebrew.  The best one Fabricator and I have come up with so far was our chocolate oatmeal stout.  It was pitch black, smooth, and no trace of bitterness.  This reminds me we haven't done any in a while...

One of my favorites that my wife and I made was an imperial porter. Dark dark dark! I think it ended up being about 9.0. We were trying to do the best we could at duplicating the Flying Dog Gonzo Imperial Porter(great beer). It was rad! My favorites are reds, but I've only made one of them.

I keep forgetting about reds, so few brew them and fewer brew them well! Maybe that will be my next.. some sort of imperial red rye.. mmm wish i had one right now

Careful it doesn't blow the top. Had that happen once. The wife never let me forget it. Three weeks? It will probably taste a bit crappy til about three months. I always let my beer sit in the bottle for at least that long.

the batch i have now is called american ale
this is the first time i used hops and barley
the other times i made it it was just a syrup that you heated up
even that was great
the kit cost $35 and has everything you need
even the bottle caps

Cornelius kegs are where it's at! :)  I switched from bottling to kegging years ago and never looked back.  So much less work and clean-up, and no waiting an extra couple of weeks for the finished beer to self-carbonate if you don't want to.

agreed 3 weeks isnt long enough my beer sits in the bottles for a good 3 month

You know the whole bottling process? You don't have to do it. Beer goes straight from fermenting to keg. I would like to start bottling about a 6 pack to set aside out of each batch. It gets so much better the longer it sits.

why is kegging beer so much easier?

No bottles to store, clean, sanitize and then individually fill and cap.  You just rack straight from the final fermentation vessel into the keg.  At that point you have the option of either cask conditioning to let it naturally carbonate for a few more weeks, like you do with the bottles, or you can force carbonate it with the CO2, and it will be ready to drink in 24 hrs.

If you have a good homebrew supply shop near you, that would probably be the best place because they can hook you up with everything you need and show you how to use it.  I got started kegging by hanging out and talking with the guys at Austin Homebrew Supply.  Unfortunately comprehensive, "full-service" homebrew shops can be kind of hard to find. 

Check around online, too.  I bet you can find some good package deals on everything you need to start kegging and dispensing.

I set up a kegerator using a kit that had everything I needed to put two kegs online and a regulator that is modified to use paintball Co2 bottles. I installed it in an old refrigerator and it's been a god send. I don't have to mess with the bottling process anymore. I have four soda kegs that I can keep in rotation. I also bought fittings so that I can hook a storebought keg up to it. I keep frozen mugs in the freezer section. It's a great way to save yourself a lot of the hassles associated with the bottling process. I already had a donor refrigerator and as I recall I spent a little under $400 for the whole set-up.

Don't know what yeast you're using, but I don't ever bother with a secondary.. I think it's a good idea with bottles to make sure the yeast is COMPLETELY done, but with kegging it's never been a problem. Main thing is that you want to give it enough time for the diacetyl rest after the yeast has settled out, but you don't really want the beer to stay in contact with all of the hop detritus for too long.

I use white labs yeast when I have to, but get great live cultures from a local brewery (Laurelwood Brewing Co) which makes for great big ferment starts within hours. With that yeast, the beer is usually settled down and ready for the diacetyl rest in a week or so, and kegged and drank within 10 days to 2 weeks.
