From personal experience I would say there are several reasons:

1) Simplicity. These bikes are very easy to work on.
2) Reliability. Fix them right and they will get you where you are going.
3) The CB750 is THE first superbike.

The SOHC can be made into a very clean project bike.  The engines look nice and simple, not bulky.

Does anyone know if you can use the same oil in the DOHC as the SOHC?

Finally an oil thread-Have not seen one in awhile  ;D Spinned-Word is that the engines on the SOHC can last longer also with proper maintenance , plenty of parts available on the secondary market and the cost of entry can be inexpensive if you are patient for a deal, and might be worth more in the end for the collectible value.  OH and the most important thing-you get GREAT help from these blokes.

Coolness.
Handling.
Power.
Simplicity.
History.
Reliability.
And, there is no full-color rebuild manual available for the DOHC bikes.  ;D

Don't the DOHC4s need a $300 in shims to set the valve lash?  Or, have I mixed that up with some other bike?

I believe you are correct, "shim under bucket". Sounds like a new valve cover gasket would be involved too.
