Why do people seem to prefer SOHC over the DOHC bikes?

From personal experience I would say there are several reasons:

1) Simplicity. These bikes are very easy to work on.
2) Reliability. Fix them right and they will get you where you are going.
3) The CB750 is THE first superbike.

The SOHC can be made into a very clean project bike.  The engines look nice and simple, not bulky.

I would probably use NEW oil instead of the SAME oil...

Yes you can, depending on your area, 20w50 or 10w40 dino, or even syn if you want.

I would use double blended oil in a dohc and single blend in a sohc...Larry

Finally an oil thread-Have not seen one in awhile  ;D Spinned-Word is that the engines on the SOHC can last longer also with proper maintenance , plenty of parts available on the secondary market and the cost of entry can be inexpensive if you are patient for a deal,and might be worth more in the end for the collectible value.  OH and the most important thing-you get GREAT help from these blokes.

Because some of us are not insecure, and better is not always necessary...

 Plus some of us know how long these can last with very little working on... = more fun for the bux..

Don't the DOHC4s need a $300 in shims to set the valve lash?  Or, have I mixed that up with some other bike?

I believe you are correct, "shim under bucket". Sounds like a new valve cover gasket would be involved too.
