I would say they are still in there. The copper color in your pic (the exhaust gaskets are copper)? Also, the recess that they sit in only has one step, not two like shown in your picture. Pry away.
Change them every time you take off the pipes. Don't reuse.

Replace every time? Really? I have replaced mine once and not with copper but fiber gaskets. I have removed my exhaust a few times since and never had a leak. maybe the later exhausts seal better.
It's one of those things that's recommended, but that you can generally get away without doing every time. I've only replaced the exhaust gaskets on my K1 twice in the past seven years, and I've had the pipes off five or six times

I don't have crush washers on the oil drain screws but flat aluminum washers. I suppose you could call those crush washers but I think of those as having a seam in the center that closes up when you tighten? Those types are definitely one time only use but the aluminum flat washers seem to handle multiple reuse just fine.
