So it is heavier but the cg is where the big issue comes in.

I'd bet that's exactly right. The Nighthawk simply felt a lot less "tippy" to me; that is, when you got the bike off balance at stand-still it didn't become an immediate weight trying to head to the ground.

By the same token, I felt the Nighthawk didn't want to change direction as quickly as the CB750 while at speed. The Nighthawk just kind of wallowed along as if in a trench or something. Which is nice on the freeway, but doesn't exactly make you eager to head to the mountains.

Well the nighthawk has a lower center of gravity than the 750. A mid-90s - 2003 nighthawk was 463 pounds dry. 469 for an 85 nighthawk 700 and 475 for a 79 - 85 750 nighthawk. The 78 750 was 508. So it is heavier but the cg is where the big issue comes in. However if the 500 is almost the same height, it will have a high cg as well. Most bikes can go on diets however. You can remove the center stand cause really, how often do you use it unless you are working on the bike? I never do. Do work on the fenders. even swapping for lighter signal lights helps.

Sometimes you just have to throw a leg over multiple bikes before you find what you really like.

Hey, Are you sure that the Nighthawk goes back as far as 79'? I thought that model actually came out around 83' or 84'. I've got an 80' CB750K and I was under the impression that the K, F and maybe the C were the models at that time. I'm not really too sure about the C version though.
I' d like to see a photo, if there was an 80' model Nighthawk to see what the difference would be.

the 81 DOHC I'm looking at is a CB750C, it was the in between the sport and cruiser models of the nighthawk I think.  The first DOHC 750 was introduced in 79 by looking at the info on the net.
