It will be interesting to hear how the SOHC 750 compares to the DOHC 750, even if the DOHC is the cruiser version..  I know that I am very happy with my CB550, and I previously owned 2 DOHC CB750's, and a DOHC CB900, all three "F" models.  I've just been getting my 550 roadworthy, so I don't yet know how it compares to the others power wise, but it feels more agile, and that's a very good thing!

I like the '78 750F so much I've got two (and 1/2) :D :D  The downside to this model is that the valves wear out quickly. I have yet to see one with over 40,000 miles that hasn't been in need of engine work. I'd check compression before making the switch. Also might be a good idea to take the tappet covers off and inspect the top of the valve stems to insure they haven't been beaten to death (cam has a pretty steep profile).

Other than the valves, this bike has all the "Supersport" improvements that carried over to the next DOHC bikes. Fun to ride and easy to work on.
Give me..a frame to build a bike on, and my imagination will build upon that frame
