Questions about front fork springs HONDA CB

I've just stared a 71 CB350 twin cafe project. I've been looking at pics of other cafe bikes and it seems that the front forks are usually stripped down (without covers and fork ears). I took mine apart last night and i noticed that the fork covers actually cover the hydraulic cylinder and shock spring on my bike. do most Honda CB models have front springs? if so how can your ride the bike without them? example of the cafe'd forks below

Your bike has external fork springs and top bolt through the upper clamp - most 350's did until the CB K4, CLK4/K5, and the G model, which had no external spring and a pinch bolt on the top clamp........most of these later models had chrome fork ears and the larger head lamp.
