I love a good pulled pork sandie.
Last weekend I tried a new slow cooker/crock pot recipe and wanted to share.
I've been eating it all week.

15 minutes prep the night before, and it'll be done by dinner the next day.
you'll need.. a crock pot.
~6-7lb pork shoulder
1-2 onions.
kosher salt, pepper and your favorite dry rub.
3-4 C apply juice
1 tsp liquid smokeThe night before....
Chop the onions (walla walla sweets are nice) and layer the bottom of your crock pot.
de-bone the pork and trim off, if you chose, any fat.
Give it a rub down with kosher salt, pepper, and dry rub, and place it in the crock pot on the onions and into the fridge.
in the morning (or 8 hrs before dinner), mix 1 teaspoon liquid smoke + 2C apple juice, and pour over your pork.
Top off your cooker with the remaining apple juice as needed.
Turn it on low and head out for the day knowing you're coming home to a good hot meal.
8-10 hours in the slow cooker will do it. 190F is the internal goal temp.
Turn the pork over 4 hrs into if you are around or have someone who can.
When cooking time and temp is reached, remove the pork from the cooker and place on a baking sheet. juices will flow. shred with forks, and enjoy between whatever carb-laden pork holders you have available, plain, or topped with your favorite condiments.
If you have the time, and a smoker, you can forego the liquid smoke and smoke it for a few hours @ 225F with alder or hickory, and then place in the crock pot with onions and apple juice until cooking temp is reached.
