Tapered Bearings - Shim Question

So in the next few days I will be overhauling my neck and installing a new fork with tapered bearings from All Balls.  My concern is the shims that come with this setup.  How do I determine the shim thickness if the bearings are not present?  I have an entire fork I am installing that came with no bearings.  Upon disassembly of my current fork setup the bearings of course fell to pieces.  Where exactly am I to take measurements?  And what if I just cannot?  Will it matter from fork to fork?  They are both 77-78 750F forks just swapping from one to the other. 

Sorry I asked a lot here, I just haven't found this situation from the little bit of searching I did.  Just reference to "measuring the bearing stack."

I have never used the thick shim on any SOHC bikes. More specifically, the thin shim is what was required for my 78F.

There is a thread that shows how to measure the stack. Maybe in FAQs!?

I used the "thin" shim with my 750 and I believe everyone else has as well.

+3 on only using the thin shim.  I have done 2 bikes and never used the thick shim.
