How tall is your 750?

What is the height like on your 750? I have a 76k with a cafe seat and I can barely touch the ground. I am 5'11". I was wondering if sticking my front forks up through my tree by an inch or two would make a difference. Also can the shocks be adjusted other than adding blocks?

Something seems off.  What's your inseam?  I'm only 5' 7", 30" inseam, and can just manage to flat-foot my K1 with my combat boots on and the forks pushed up in the trees about an inch.  Stock seat, stock tire size and stock length shocks.

On the K1 at least, I believe the stock length is 13 inches.  Did a PO install longer forks?

Try these 70's era disco shoes and you won't have to screw around with your bike.... ;D

Stock seat height is 32 inches.  Most cafe seats seem to have less height so it seems odd.  If you are running metric tires they could be a bit taller than the stock inch tires.

How wide is the after market seat?  A wide seat will force your legs out to the side more, requiring a longer leg to reach the ground. 

Most metric size tires (at least the ones I've come across) actually have a shorter sidewall than their standard equivalent.

Ahhhh, cafe seat is a little wider, about 11 3/4 at the widest part. How wide is the stock seat? Mine didn't come with one. Here are a couple pics.

I have 100/90/19 on the front and 120/90/18 on the rear.

Judging by that picture I think your seat may be playing a part in this.  My K1 seat is also about 11.75" at the widest point, but it tapers to less than 9" at the front where my inner thighs are when putting my feet down.  Yours doesn't look like it tapers that much.
