There is really no need to regear, once you get it running properly, you will have plenty of low end torque.

Well the goal was to get it running good before the build yes, the makor components of the build are going to take place at school during 3rd quarter, 2 weeks of 1st quarter left. In the meantime I'm going to get new shocks, lower the whole thing abount 2" and order most of the aftermarket parts: seat and handlebars from carpy, as well as progressive front and rear suspension compnents, and gear it down. At least thats the plan right now.

Congrats on the free CB750 (love granddad deals), and welcome to the forum.  It brings a warm fuzzy feeling into my heart to see a young-blood so excited to work on one of these old gals.  I think that this is the best school project that I have ever heard of.

When I got my K7, the PO had a set of heavy duty shocks for 2 up riding.  As a short dude, I could barley touch the ground.  I looked into quite a few shocks, and settled on a set of 310mm/12.2" Hagons.  The come in many lengths, and are available with a clevis mount. In addition, they fit, perfectly, so no cutting or bending of the chain guard.
Also, they(DaveQuinnMotorcycles.com) can set up the spring weight to best suit you and your style of riding.  For the money, they can't be beat.  My opinion of course.

Hey not to be Debbie downer but you can get parts for much cheaper.. Look into Z1enterprises. If you are going with clip -ons, searched the forum... Lots of peeps cant do extended rides with those and clubmans.

Look around before you send any money to anyone.  There are a LOT of options out there for both OEM and aftermarket parts.

No one is questioning your reasons why, they're just trying to help in their own way.  I understand what you are looking to do.  I have one question if I may?  Have you counted the teeth on both sprockets?  It is possible that your grand father changed, or had someone change the gearing.  The original gears are 14T in front, and 48T in back.  Giving you a ration of about 2.32.  In one of these higher reving sohc4, that gives most riders a good combo of street and highway.  Very close to what you said you were looking for. 
It's not quite the same as a car.  These engines will get the the red line much faster than a small block.  But, I'm willing to bet you may already know that.  ;)

Ah, now that makes a difference.  If you don't plan on driving it everyday, ballz to the wallz it is!
All out front tire lifting scare the wewe out of you =15/46.
Still killer off the line power with a little less wewe=17/42

I think the tooth numbers given are for a 630 chain. That bike should have a 530. The front sprocket should have 17 or 18 teeth. 16 is possible but hard on chains. I would go for 17 on the front and increase the rear sprocket until you get what you want.

just ordered a custom 56 tooth rear sprocket because I have the 18t front. Should give me a 3.11 gear ratio.

I think its how my clutch is set up, it engages late and when I adjusted it, it would not pull it enough and wouldn't go into gear.

refinish? you mean paint correct? Its very common here. Look at other build threads and you will see most have repainted

To be more clear, the covers were not painted from the factory but the cases were.
You could paint the covers, I prefer to polish them.

The covers look good, they look like crome. It's under the carbs where some gas has dripped and the paint came off.
