Sprocket, how many teeth?

   If I re-gear with 2 less teeth on my rear sprocket, is it 1 or 2 less links for a new chain?

I would guess that you could just adjust the wheel further back and compensate for that.  The difference in sprocket diameter is going to be pretty small. 

Removing one pitch of 530 chain (one inner and one outer) moves the axle forward only half an inch.

The pitch of 530 chain is 5/8".

The pitch on a 630 chain is 3/4" so you will be removing 1 1/2" of chain to keep you axle in the same spot.

Thank you for that technical explanation of pitch dimensions, you learn something new everyday (if you are lucky). The good news is my plan to increase top-end speed w/ the new gearing and the improved aerodynamics (courtesy of my Don Vesco fairing), my 78 SS will now effortlessly pull 125+ mph. Previously, 115 was where it ran out steam at 115.

How old is this 630 chain? Why did you run out of adj. did it stretch? If that happened then it may be time for a new one. How do the sprockets look? Oh it looks like you bought a new one and it is to long.

I just slide the wheel up and cut the chain to fit.

I converted my 77 CB750F2 over to 530 chain when my 630 chain wore out.  Very happy with it so far although I'm going to change the front sprocket +1 to change the ratio a bit.  I'm at 3:1 now and want to change to 2.8:1 to drop the rpm at cruise a little.

Chain links are in pairs, so you have to remove at least two at a time.  It's entirely possible I'm either misunderstanding or just being to literal. :-\

That correct unless you use a half link which I wouldn't do on a motorcycle.  In any case the pitch is still from one pin to the next.
