Tongued Washers

Replacing the front rotor on the bike, and the current tongued forks may need to go.  They are not broken, but they just don't match the "new-ness" of the rotor, so I'm thinking of going a different route.  It's hard to find them at OEM suppliers, so is anyone using a different alternative?  Would lock washers be sufficient?  I'd like an immediate solution so I could get everything back on the road asap, but I'm willing to re-use the tongued washers if that is the best route.

Correct, nylocks and no washers.

Sweet.  Sorry about the stupid questions, but would I have to go to a hardware specific store or would Lowe's or Home Depot work?

I would look for a deformed or all metal lock nut.  They look better (like a plain nut) and are more heat resistant (not that the hub gets that warm)  Plus as few thread sizes that they have on the Hondas it wouldn't hurt to have a few extras laying around.

They may have it too - but you need  M8s, that is unlikely.

The 1969-75 750 K owners can take advantage of the new style 8 mm disc rotor flange style nuts that began with the introduction of the 1976 750 K6. Part number: 90309-357-000, which replaces the earlier tanged washers and nuts. Note the correct torque spec for these nuts.
