Help a newbie - CB350F choke

So I recently bought my first bike, a Honda CB350F, and I'm a little confused about the choke, please bare with me as I'm sure I don't describe it too well.

Now when I warm up my bike, I open the choke to warm it up and wait a few minutes until I get 1.5 rpms then I close it until it gets up to 2 (which I figure means it's good to go). But I noticed this isn't as far as the choke can close, so when I tried pushing it farther I end up killing the engine.

So am I doing something wrong? Maybe it needs to warm up more before I completely close the choke? Or am I supposed to leave it in that 'sweet spot' before it kills the engine?

Pulling up on the lever gives more choke.
Lever down is no choke.
It stalls when fully up because its fully choked

Ah okay, I've been reading up on this lately and ended up confusing myself but that helps, thanks.
