Scrambler or caferacer with sports bike tires?

Hi Guys I recently acquire a 1993 cb750 nighthawk in GREAT condition (other than carbs)

So I'm debating what style of bike I should build it into, love the scrambler look http://pin.it/rBJKwNk but I also love the cb750 modern-caferacer type http://pin.it/KJ22NGJ

Wanted to get your opinion on what people have experienced with since this will be my first cb750 ride/build, that is of course if money wasn't an issue... thinking more on the performance/handling aspect of the bike.

To me, CB750 bikes are a little heavy for a scrambler.  There are less aftermarket parts than the SOCH bikes, but the DOHC bikes are pretty easy to do something racer-styled. 

The 93 Nighthawk is more of a cruiser style frame.  You might need to do some re-working of the subframe.

Good pointers! So If went with the modern-caferacer style I may look into implanting a Ducati mono-swingarm as well as GSXR front-end definitely more of work/$$$ but let's see If i get the greenlight from my olLady

Great bike. I went ~4700 miles cross country two summers ago on my 91' CB750. I was running dual sport tires and it surprisingly handled decent given the circumstances. With that being said, I'd personally go scrambler with something like that.

Believe it or not I ran Shinko 705's. Great tire for $60 a piece! Rear tire was still at 60-70% of remaining meat upon completion. Here's a couple pictures for your reference:
