I got a 76' CB550.   Here's my questions;
I'm looking to make the CB550 a track/replica racer type bike.  I want modern rubber on it.  I have a rear rim from a 79/80'(ish) CB650.  I just have the rim.  It's a 40 spoke original rim. 
The size stamped on the rim is MT2.50X17  18 90 --29  0915.  With shorter spokes (perhaps from Buchanan) could this rim be laced to my front hub?  Also, would it be possible to get a die and cut threads further down on the spokes and cut off the extra length? 
Now, back to the rim.  What tire fits on that rim?  Does the 120/70 front sport bike tire fit?
Or, are these questions I should ask Buchanans?

Yes that tire will fit a 2.5 rim. Buchanan's will sell you 17" spokes for a 40 hole rim that are the correct length. You will still need to run a tube with that tire, so be aware of the type of tire you buy as you want a tube-type, not a true tubeless.
