I've got 2 stator/rotors laying on my shop floor ready for an installation on my 73 cb750 rebuild project.
Is there some checks I can do to make sure I install a good one?

Yes, if you have a good, accurate, ohm meter with short test leads. According to the Honda Shop manual, the field coil should read 7.2 ohms.  The stator rated resistance is (ahem) .2 ohms.  Probably need a milliohmmeter for that test.  Measure between any two of the three terminals.  Measure twice with different terminals.  There should be no continuity between the terminals and the metal body of the stator.  They don't list any tolerance or measurement limits, though there must be, in practice.  Perhaps 10% of listed value is reasonable?
