Parting out a bike - Help a first timer out.

Of course my laptop is not cooperating with me so I'm not getting the pics to load right now.  I'm thinking about picking up another bike, but the lady and myself are interested in reclaiming some garage space being taken up on the two junk bikes that came with my first bike.

But when I bought my 550k1, the owner was clearing out his garage of all motorcycle stuff, had a son turning 16 in a week and was ready to get it out.

With my 550k1 I got a junk 550k2, he bought it off ebay to have around as a parts bike with no title.  I kinda like having it around for spares, but I'm thinking about letting it start to go.  The engine kicks over, the seat is torn to heck and it hasn't run in a while.

I also got an early 80's cb700sc nighthawk.  This one has a few dings but it is in better shape.  I've been thinking about trying to get it cleaned up and running, but it has no title either(PO's wife managed an apartment complex, someone left it.  She moved it to their garage to get it out of the complex until he came back for it.  He never came back, been 10+ years.)  I can't find much if any info on a process to get a new title made in Ky, so I was thinking about parting this one as well. 

Do I just start removing stuff, identifying it in a fiche and post it on ebay?  On a 700SC board?

First I would search ebay for parts for the bike and then look at completed sales to see which parts were desirable and how much they are worth. Then I would decide whether it was worth my time to take the bike apart as opposed to just putting it on feebay or craigslist whole and selling it as a "barn find". Which ever way makes the most money with the least effort, that's my way! ;D
There are old bikers and there are bold bikers but there are very few old, bold bikers.

I've gotten some hits on a craigslist add to sell the whole thing but at the same time I'm trying to get a new title.  It appears Kentucky has no abandoned bike title procedure.  I've had the police/clerk run the vin and they are coming up with nothing.

Anyone have experience with this in Kentucky?  Are there websites with workarounds to get a title?
