Nick is right. There is no connection between the coolant and a possible jetting issue. If it hasn't been changed in 10 years, it's probably overdue.
There is only one way to be absolutely sure on the jetting. Install the new pipes and ride it for a while. Then read the plugs. The only thing that could be hurt is the plugs, and they are relatively cheap. But first, does Cobra have an opinion? And is everything else stock(air filter in particular)? Typically, a "not so radical" pipe won't require a jetting change. When selecting a pipe for a sport bike, there is usually a selection of baffles depending on how radical you want to go, because horsepower is the main reason someone does this to a sport bike. Not too much selection with the cruiser bikes, as the intended results are usually just a new look and minor tonal changes.
