Two questions about my 76 CB760F

I did an oil change today and followed the manual which says to add 3 qts, run it for a minute, then add more as necessary. I added a whole quart before the oil almost reached the top line. Is this normal? I had the bike standing straight up but not on a centerstand, since it doesn't have one.

Also, in my search for info on the various parts of my bike, I've seen the 76 F model referred to as an F, F0, and an F1. Which is correct?

75 is the F0 and 76 is the F1 but they are pretty much the same bike except for color.  As these are dry sump motors there is a check valve in the oil pump and this has a tendency to leak oil into the crankcase when the bike sits.  It's not really a problem but it can cause people to overfill the oil tank so when you check your oil do it after  running the bike.  3-4  quarts sounds about right if you also changed the filter.  I think the capacity is around 3.7 quarts if memory is correct.

Thanks. If the capacity is 3.7 do I have anything to worry about with that extra .3qt in there?

I would think it shouldn't be a problem.  Run it again and check the level and if it's at the line you're good to go.  Occasionally some one will overfill it by a quart or more and then it has a tendency to blow out the crankcase breather system or overflow tube.  If you are concerned you can always get the turkey baster out, just don't tell the wife. ;D
