Just threw these sockeye strips in the smoker. 
Deboned and skin off, these sat in 4:1 dark brown sugar: kosher salt dry brine for 12 hrs.
4 hrs on Adler chips and they should be done.
Half are peppered. Half has pineapple juice brown sugar glaze.
'78 750K (F3 engine) PD42b's, Modified airbox w/K&N  filter, 40/110 jets, 1 needle shim, IMS@ 1 turn out. Kerker + Cone 18" QuietCore

Yes, steelhead, kings, and coho mostly, but the lack of rain in the PNW (not complaining) has made runs poor so far this year.  This sockeye came from a buddy who was up on the Kenai last June.

Fresh salmon is one thing I really miss about living in Washington.

I love fresh sockeye almost as much as kings. Unfortunately at the moment all I see in the stores is coho (boring).

Drove 4.5 hours after work last Thursday, with my father in law and an inspector, and we didn't even catch a single salmon lol.  They were jumping 1 atleast every minute, but just weren't biting..
